Belokranjska povitica (rolled cake)
The rolled cake is a traditional dish made from strudel dough and filling, shaped into a thin loaf. White Carniola rolled cake is distinguishable from similar dishes by its shape, filling and the way it is prepared. The rolled cake must be crisply baked and salted. When it is baked, it should be a light brown colour, and there should be air between the sheets, so that they do not stick together. It is served cut into slices.
Ingredients for preparing the dough:
50 days of white flour
1 egg
3 to 4 dcl of lukewarm water
2 tablespoons oil
teaspoon of vinegar
pinch of salt
Ingredients for the preparation of the filling for Bela krajina povitica are:
1 kg of fresh home-made cheese or cottage cheese together with shells (overheated cream)
2 eggs
2 teaspoons salt
Preparation:
Knead the ingredients for the preparation of the drawn dough into a soft and smooth dough, from which we form four small loaves, which we coat with oil and cover with a cloth or bowl. Let the dough rest for half an hour. The dough is then rolled out as thin as possible and left to rest for another 10 to 15 minutes to dry slightly.
To prepare 1 kg of stuffing for Bela krajina povitica, we need 5 to 6 liters of fresh home-made cow's milk, which should be cooled in the refrigerator for 12 hours. The milk is then slowly heated almost to boiling point, so that a thick layer of cream with a skin forms on top. Place the milk in the oven at 200 ° C, where it is heated for about 10 to 15 minutes, until the cream on top is browned. The cream thus obtained is collected from chilled milk and is called shellfish.
During boiling, a teaspoon of apple cider vinegar is added to the rest of the milk to curdle the milk. When cool, strain the whey through a kitchen towel. The resulting cheese must be white. Knead the cheese, shell and two eggs into a thick mixture, which is applied with a spoon over the stretched dough. Wrap the coated dough in a roll or roll and place it on a greased baking tray. Spread the top with beaten egg or just egg yolk. Approximately 2 kg of (unbaked) Bela krajina wrap is obtained from the described mass. The rolls (four) can be baked together or individually in the oven at 200 ° C for 30 minutes.
