Jaglača or mastenica (cereal sausage)

The cereal sausage called jaglača or mastenica is a semi-durable smoked sausage. It is made from a large intestine filled with millet porridge and pieces of prata (netted roast pork) and the finer pieces of pork. It is usually up to 50cm long, smoked and cooked. They used to serve it with sauerkraut or sour turnip and potatoes during extensive vineyard work.
