Bean struklji (rolled dumplings)

Bean struklji are a main or side dish made from strudel dough and filled with mashed beans, eggs, sour cream and spices.


Ingridients for the dough:

  • 250 g of flour

  • 1 egg

  • 20 g of oil

  • sol

Ingridients for bean filling:

  • 600 g of peeled young beans

  • 100 g sour cream

  • 2 eggs

  • sol

  • black pepper

  • parsley

  • crumbs

Preparation:

Add water to the beans to cook the beans; let’s salt. Shake the beans in the crumbs and cook until soft. While the beans are cooking, prepare the drawn dough. Sift the flour into a bowl. Make a hole in the middle to kill the egg, add 1.5 decilitres of lukewarm water and a little salt. Mix all the ingredients quickly, then knead a pliable dough that separates from the hands and bowl. Form it into a loaf, coat with oil and let it rest for 30 minutes.

Drain the cooked beans, mash and cool until lukewarm. Finely chop the parsley and shake to the lukewarm beans. Add sour cream, eggs, salt and ground black pepper and mix to get a nice spreadable filling. If necessary, thicken it with crumbs.

Roll out the rested dough thinly on a floured surface, then roll it out on a floured tablecloth with your palms. Cut the thicker edges and spread the dough evenly with the bean filling. Roll the dough tightly with the help of a tablecloth, and wrap the štrukel tightly in gauze or plastic foil. Cook the štruklji in salted water over a low heat for 20-30 minutes.
